550 g pitted prunes

275 g sugar

Tips

If you have a sweet tooth, you can double the amounts and the preparation times will remain unchanged

RECIPE STEPS

Put the prunes and caster sugar in the food processing bowl with the metal blade.
  • 550 g pitted prunes
  • 275 g sugar

Blend for 40 seconds or until reduced to a smooth paste.

Cook in a bain marie, stirring occasionally, until the mixture starts to thicken and comes away from the sides of the bowl (approximately 1½ hr).

Spread the mixture in a 2-cm thick layer on a tray lined with baking parchment.

Allow to cool. Cover with a tea towel.

Leave to dry for 2 to 3 days in a dry place.

Cut the paste into small cubes. Roll in the granulated sugar. Remove the excess sugar.

Store the fruit pastes in an airtight container.
