3 medium red waxy potatoes, shredded

15 ml vegetable oil

1 clove garlic, minced

0.5 tsp salt

0.25 tsp black pepper

0.25 tsp smoked paprika

2 large eggs

Tips

This recipe is sized for a mini waffle maker but can be made with any type of waffle maker. You can add veggies and meats or even seafood — like diced onions,peppers, and ham — to the waffle batter. Cheese tends to burn before the potatoes are cooked

After shredding place potatoes in a medium bowl. Pour in enough cold water to cover potatoes; soak for 2 to 3 minutes. Drain and rinse to remove starch twice.

Squeeze water from potatoes by hand or roll in a clean kitchen towel and twist the towel to wring out water.

Preheat the waffle iron according to manufacturer's instructions. Grease the waffle iron with cooking spray

In the Mini bowl combine the eggs, oil, garlic, salt, pepper, and paprika for 5 seconds.

Returning to the medium bowl combine the potatoes and the egg mixture until evenly coated

Spoon a level 1/4 cup of the potato mixture into the preheated waffle iron; (depending on your iron) close and cook until potatoes are tender and golden brown, 10-12 minutes. Repeat with remaining potato mixture
