500 g strong bread flour

2.5 g salt

2 tsp cinnamon

45 g sugar

15 g fresh baker's yeast

200 ml water

1 egg

45 g butter

100 g candied fruit

1 zest orange

1 egg

50 g plain flour

50 g water

Tips

This all in one method does produce a dark, fruity dough. If using pre-soaked/soft fruit, prevent the fruit breaking up by reserving to add at the end of the programme. Add the delicate fruit either by hand or run BREAD/BRIOCHE 10seconds.

RECIPE STEPS

Weigh all the ingredients into the metal bowl, run BREAD/BRIOCHE 02:00/auto.
  • 500 g strong bread flour
  • 1 egg
  • 2.5 g salt
  • 2 tsp cinnamon
  • 45 g sugar
  • 15 g fresh baker's yeast
  • 200 ml water
  • 45 g butter
  • 100 g candied fruit
  • 1 zest orange

Rest for an hour. Cut the dough into 12 equal peices and shape. Allow to prove until doubled in size.

To make the crosses mix equal parts flour and water into a paste and put into a piping bag.
  • 50 g plain flour
  • 50 g water
  • 1 egg

Just prior to baking, glaze with beaten egg before piping the crosses.

Bake at 180˚C for 22-25 minutes.

Then brush with runny honey while still hot from oven.
