Metal bowl and steamer.

500 g lamb or beef mince

0.5 red onion, peeled and quartered

2 tbsp parsley leaves (curly)

28.3 g mint leaves

1 egg

1 tsp ground cumin

2 cloves garlic

1 long red chili, de-seeded

0.5 lemon zest

100 ml boiling water

1 tbsp butter

2 firm tomatoes, quartered and de-seeded

0.5 bunch parsley leaves (curly)

0.5 bunch mint leaves

0.5 red onion, peeled and quartered

0.5 lemon juice

1 tbsp olive oil

150 g of Greek yoghurt

1 clove garlic, crushed

2 sprigs mint, leaves removed

0.5 tsp paprika

1 medium Lebanese cucumber, de-seeded

0.5 zest lemon zest

Tips

Fresh Lebanese bread or wraps of choice to serve. Can also be served with grated carrot, cheese, sliced cucumber & lettuce. Serve with your choice of sauce, BBQ, sweet chilli, Sriracha, sour cream, the list is endless.

RECIPE STEPS

Place onion, parsley, mint, garlic, chilli in metal bowl. Pulse to chop. Scrape & pulse again if required.

Add mince, cumin, lemon zest & egg in metal bowl with onion mixture.Start EXPERT, increase speed till mixed together.

Set aside in a bowl & run a quick 20 second rinse cycle on machine.

Place tomatoes & onion in mini bowl. Run till chopped to your liking. Set aside in a bowl to mix with other ingredients.

Add parsley & mint to mini bowl, AUTO till all chopped. Add to bowl with tomato mixture.

Place in midi bowl with 2mm grating blade. Grate cucumber. Set cucumber aside over small colander or on a plate, sprinkle with salt to help draw out liquid.

In mini bowl add yoghurt, crushed garlic, lemon rind & juice, mint and paprika. AUTO till combined, approx. 30seconds. Set aside in a bowl.

Place couscous in a bowl, cover with 100ml boiling water, add butter, cover for 5min.

Place boiling water in metal bowl, add steaming basket, spray lightly with oil. Roll meatballs (Approx 1 tbsp size) & place in basket. EXPERT, 8min/0 speed/120 degrees. While meatballs are steaming start putting together Tzatziki & Tabbouleh.

Stir couscous with a fork, let cool for a few minutes.

Squeeze juice from cucumber & add to yoghurt mixture.

Add lemon juice & oil to Tabbouleh. Stir through couscous.
