1 orange, zested

500 ml orange juice

3 tbsp lemon juice

4 leaves bay leaves

250 g sugar

1 pinch salt

Weigh the ingredients into the metal bowl.

Run EXPERT 10:00/2A/120C. Allow the sugar to dissolve and the liquid achieve a vigorous boil.
Expert 10:00 / 2A / 120°C

Run EXPERT, with cap off, 20:00/2A/110°C. Cook and reduce the liquid into a thick syrup.
Expert 20:00 / 2A / 110°C

Remove the bay leaves and carefully, funnel into a sterlised bottle.
