125 g caster sugar

125 g icing sugar

5 egg whites

300 ml double cream

1 sachet vanilla sugar

100 g strawberries

100 g raspberries

3 leaves mint

Tips

The temperature and the cooking time of the meringues will vary according to their size but also according to your oven (refer to the instructions for this one). You can use other sorts of fruit: peaches, apples, grapes, etc.. A raspberry coulis makes an especially delicious addition.

RECIPE STEPS

Break and separate the eggs.
  • 5 egg whites

Beat the egg whites for 5 minutes in the food processing bowl fitted with the whisk, remembering to remove the pusher or cap first.

When the egg whites are stiff, gradually add the caster sugar and icing sugar via the opening. Continue whisking for 1 minute. The whites should be firm.

Line a baking tray with baking parchment and use a piping bag (or a spoon) to make small circles of meringue (about 8 cm across) onto it.

Place in the oven at 80°C for 2 ½ hours. The meringues are baked when they come off perfectly. Once fully baked, open the door and let the meringues cool in the oven.

Chill the bowl and ingredients in the fridge for 1 hour beforehand.

Pour the cream into the bowl equipped with the whisk.
  • 300 ml double cream

Switch your machine on, remembering to remove the pusher or cap.

Whisk the cream. Keep a close eye on it to make sure it does not turn into butter. When the cream starts to thicken, add the vanilla sugar. The time may vary depending on the type of cream and the temperature ... it is generally between 3 and 6 minutes.

Just before serving, coat the meringues in whipped cream. Add the fruit and mint leaves.
