RECIPE STEPS

Heat the milk and cream and bring it gently to a boil.
- 300 ml whole milk
- 250 ml whipping cream

Mix the egg yolks and sugar until they are light yellow. Add the pistachio paste and mix until it is completely incorporated.

- 100 g sugar
- 100 g pistachio paste

Add the milk/cream mixture and continue mixing. Pour it back into the pan and bring to a boil. Let it simmer on low heat, while you keep stirring, for 5 minutes. You should now be able to draw a line on the back of your spoon that remains visible. Your mixture has then thickened enough.

Pour it into a container, let it cool down.

Pour the mixture into the Gelato Expert and set it to the ice cream setting. 25-30 minutes later, your pistachio ice cream is ready. Stir in the finely chopped pistachios. Put this in a container and freeze for several hours, so you can scoop out beautiful balls.
- 50 g pistachio nuts (finely chopped)
