Roast the pistachios for 15 minutes in the oven preheated to 180°C.
Let them cool for a few minutes.

In the transparent bowl equipped with the large metal knife and the optional BlenderMix accessory, blend the roasted pistachios in AUTO mode for 5 minutes until the pistachios form a paste.

Remove the BlenderMix accessory, scrape down the sides with the rigid spatula, add the extra virgin olive oil then restart the mixing for an additional 5 minutes until the dough liquefies.
Add the fleur de sel.

- 25 ml of olive oil
