1 kg of firm-fleshed potatoes

400 ml of crème fraîche

1 pinch of salt

1 pinch of pepper

4 leaves bay leaves

4 sprigs of chopped tarragon

Wash the potatoes without peeling them. Split them lengthwise and slip a bay leaf into them.

Pour 1 L of water into the steamer's reservoir. Spread the potatoes in the steam basket, put the lid on, cook for 30 to 45 minutes depending on the size.

Salt and pepper the fresh cream, mix with the tarragon. Serve the potatoes hot, accompanied by cream, for example with a baked fish.
