800 g squid

30 ml olive oil

1 red onion

3 garlic

4 anchovy fillets

1 tsp oregano

1 tsp baby capers

450 g of chopped tomatoes

90 g black olives, pitted, halved

125 ml fish stock

1 tbsp parsley

RECIPE STEPS

Add olive oil. Set the Cook Expert to COCOTTE Sauté 160degrees/15 minutes. Allow to heat for 2 minutes.

Add onion, garlic, anchovies and oregano. Cook for 5 minutes, stirring regularly.

Add tomato sauce, cook for 5 minutes, stirring occasionally.

Add squid, olives, capers and fish stock and allow the rest of the programme to run.

Reset the Cook Expert to COCOTTE Simmer 110 degrees/1 hour, allow to run.

Add fresh parsley and mix through. Serve with crusty bread or pasta.

Tip: You can replace the olive oil for a chilli oil if you prefer the dish to be spicy.
