1 onion, peeled and halved

2 garlic cloves, peeled

2 tbsp olive oil

500 g beef mince

1 tbsp of tomato purée

1 pinch salt

1 pinch pepper

2 pieces cos lettuce

1 lime juice

100 g de cheddar gratted

400 g black beans (1 can)

25 ml sour cream

2 tsp cumin

2 tsp paprika

1 tsp oregano (dried)

2 g onion powder

1 pinch chilli powder (adjust to taste)

Tips

You can add other vegetables to this dish: corn, capsicum, or serve with sliced avocado. Serve with plain corn chips.

RECIPE STEPS

Place onion and garlic into the Cook Expert stainless steel bowl. Select EXPERT 5min/ Speed 3/ 0 C. Press AUTO and slowly increase the speed until you reach Speed 13. The ingredients should all be chopped. Scrape down and repeat if necessary.

Scrape the bowl down and add olive oil. Select EXPERT 5 mins/ Speed 2A/ 110C. Remove cap to let steam out.

When finished, add the beef and the black beans. Select EXPERT 10mins/ Speed 2A/ 110C until the beef is cooked. Keep the cap off.

When finished, add the taco seasoning and tomato paste. Repeat the programme. When finished, season with salt and pepper to taste.

Meanwhile, rinse and slice the lettuce into thin strips. Assemble into serving bowls.

To serve, add the cooked beef mince on top of the sliced lettuce. Top with sour cream, lime juice and cheese. Serve with corn chips on the side.
