Deflate the dough and add the chopped white chocolate. Knead the dough by hand to incorporate them.
Make 3 logs or 6 to make 1 or 2 braids.

Place the brioches on a tray covered with baking paper and let them rise for 1 hour.

Preheat the oven to 180 °C.
Brush the braids with the egg yolk and a very little bit of water.
Bake for about 25 minutes.
